Gavi wine with Risotto Nero and Garlic Squid Recipe

We choose a Araldica La Luciana Gavi wine to enjoy with a Risotto Nero and Garlic Squid Recipe (Serves 2)

Risotto Nero (black rice) gets its name from the black color the rice acquires when cooked with its signature ingredient, squid ink. It’s a weird and wonderful sensation to be served black food. I love this dish and I make it regularly with seared garlic squid. It might be difficult to get squid ink but any good Italian delicatessen or decent supermarket will have it.

Its delicious with any crisp white wine but if in doubt always opt for something from the same region as the food. I think a Gavi wine from Piemonte will be perfect with this dish. Gavi wine is relatively freely available but I got this little gem from Waitrose.

Always remember to finish your risotto with a little bit of butter to add that last creaminess before serving.

125g Risotto rice (half cup)
1 sachets squid ink
1 small onion, finely diced
100ml white wine
1 tbsp butter
1 tbsp olive oil
500ml fish or light chicken stock
salt and black pepper

1. Heat the olive oil in a wide pan, add onion until it is translucent, add the rice and stir for 3 min.
2. Pour in the wine and stir until the liquid evaporates.
3. Add a ladle of hot stock and the squid ink. Stir over low heat, adding ladles of stock as it absorbs. This will take about 15min
4. Take off the heat when the last liquid is added.
Season to taste and leave covered for a few minutes. You can always add more stock or wine if the risotto is still hard and needs more cooking.

Always loved squid ink pasta. Now i have the recipe for risotto nero and will try it on monday. Squid is dead cheep in malaysia and you get the ink for free. It would be fantastic to scare my brother since he is easy to scare with different food. hahahahahahahhahahahhhahhhahahhahahahahhahahahahahhaha

1> How much would these squid ink packets cost? I am writing from Loughborough. There isn’t a Waitrose branch close by.
2> Does it make sense to boil say linguine in squid in to get squid ink linguine pasta? Else does your suggestion apply to risotto alone?

2> We find that in order to get the best taste from the squid ink rather prepare it with your saucy ingredients than with the pasta. When you mix the sauce into the pasta the pasta will adopt the black color & taste as well. Below is a link to such a recipe – lip licking stuff!
